Hey to all my zone friends! I wanted to update you on a few foodsI have made since LCB!

One is a crunchy cheddar chicken. You take two boneless skinless chicken breasts, and dip both sides in original Ranch salad dressing, then coat both sides in either bread crumbs, or oatmeal. Either one is fantastic! Then you bake in a cake pan for45 minutes at 350 degrees. It is amazing! One of my favorite dishes to make! It is quick, it is simple, and it tastes out of this world!

Another few dishes I have made lately since most of my time has been devoted to sending out resumes and my cover letter and going on job interviews, are some favorites I have had since I was a child!

One I made two nights ago! I made meatloaf with turkey meat with salt, pepper, mustard, ketchup and bread crumbs. It was so soft. I put gravy on top! Then I made mushrooms and cooked them, and I made fried asparagus! And I made mashed potatoes!

Last night I made chicken cutlits with flour and eggs! The eggs really made a difference with the chicken! It made the chicken so moist and soft! And I made mashed potatoes and broccoli for the side dishes!

This morning for breakfast, I made pancakes and sausage!

If you are on my facebook page, you seen these two dishes from today and yesterday as my statuses, so I apologize for my repeditiveness ahead of time. I just wanted to share the news with anyone who is not on my facebook page.

I love cooking! I feel so happy whenever I cook!

Tell us ignoramouses: How do you make pancakes as a blind person? I would love to know, personally.
Congratulations, it sounds like you had some trouble before and you are now more independent.

Yes cooking is great; I love to cook! I love mashed potatoes. It's great that
you're doing all your own cooking. Do you cook these dishes for just you, or
for you and your parents and sister?

tbh, I tried making pancakes. ended up dropping it on the floor while trying to
flip it. it was hard work but it was great! I need help with cooking? but
sounds awesome, jess!

Lol yeah I have a funny story about pancakes well this actually happened to
my friend. His girlfriend made pancakes, and instead of pancakes, she made
one big giant pancake. It still tasted good they just had to cut it.

Pancakes are mainly a time-consuming frustration! I can only cook one at a time, and have them turn out as they should. But overall, my pancakes are hit or miss. A few turn out beautifully shaped, and most don't. I've just accepted that it's one of those things I'll never be able to make, very well. I wouldn't plan on making them if I had guests, or someone counting on me to provide breakfast on time. LOL

Timing seems to be the key, though, two mins on one side, 1 min on the other, and don't touch them with the spatula, during those minutes! Make them in a large skillet, so you have more room and it's easier to flip. I'm sure if I tried to make pancakes more frequently, I might be able to get a system down, but it's always a lot of work, and I end up vowing never to do it again!

Yes, timing is the key. I personally am not that great with a spatula, so the challenge for me is flipping them. I've typicaly ended up folding them. Perffect for craipse, which is a thinner batter, but not your average pancake.

So has anyone tried baking pancakes? I hear this is a thing that can be done. I just found out there was such a thing as a cookie mold pan. It's a pan with 12 shallow circular impressions. The first thing I thought of when I saw it was oven pancakes.
